Thyme belongs to the Lamiaceae family. It is a fragrant, small, shrub and its
height ranges from 20-50 cm, while it has a lifespan of up to 7 years. Its leaves
are narrow and small. The harvest takes place in May – June. It is used for its
antiseptic, antioxidant, antispasmodic and astringent properties.
