Ingredients
1 octopus approximately 1.5 kg
3-4 leaves verbena
2 leaves of arbaroriza
5-6 grains of whole pepper
4 thin slices of a lemon
1/4 cup of Olive oil
Instructions
We clean and wash the octopus. Dry it well.
Lay a baking paper on the kitchen workbench and place
the whole octopus in the middle of the baking paper. Sprinkle it with the herbs and the paper. If we do not have
arbaroriza we can use other fresh herbs (e.g. basil,
lemongrass, mint, thyme etc)
Place the lemon slices on top of the octopus and pour olive oil on it.
We do not add salt because the octopus is salty by itself.
We wrap it in the baking paper just as we would wrap a candy. Put the
package in baking pan and bake it in a preheated oven for one and a half to
two hours at 180C. The octopus will extract its juices and will be cooked in
them.
We understand that it has been cooked by inserting a toothpick (at the top so that the
juices do not spill) and seeing that it is soft.
Let it cool for a while and open the baking paper.
Take out the octopus from the baking paper and cut it into pieces or we can
serve it whole. Enjoy your meal!
